Ok, so I forgot to take progress pictures as I was making this amazing walnut slice but I did remember to take pictures of the finished product. It is super easy and super yummy too! With only 5g fat and 87 calories per slice, this is the perfect snack for whenever you feel like a sweet, chocolatey treat. I also experimented with the icing as I wanted to avoid using any oil or butter to reduce the calorie and fat content. So I used full cream milk in its place but you can also use skim milk or any nut milk of choice. You can also adjust the amount of stevia you use to suit you taste. For a more bitter, dark chocolate taste use a little less sweetener.

5 tablespoons Calci-Balls mix

1 cup walnuts

½ cup (approx. 5 dates) Medjool dates

2 tablespoons honey

1 cup corn flakes


For the icing

¾ cup (60g) cocoa powder

120ml milk of your choice

1 ½ teaspoons vanilla essence

2-3 teaspoons Stevia sweetener



Line a slice tray with baking paper. Remove seeds from the Medjool dates and place in a bowl and pour half a cup of hot/boiling water over them to soak and soften for a few minutes. Drain excess water off and place dates, Calci-Balls, walnuts and honey into a food processor. Blend until combined. Stir through the cornflakes and press mixture evenly and firmly into slice tray. Place in fridge while you make the icing.

For the icing, combine cocoa, milk, vanilla and stevia in a bowl and mix with a spoon until well combined. Add a little extra milk for a thinner icing if desired.

Spread icing over the top of the slice then place in fridge to set for at least an hour. Once ready, cut into slices and enjoy.

Store slice in fridge as needed for up to a week if it lasts that long.
